Ingredients
  

Crust

  • 1 cup graham cracker crumbs
  • 3 tbsp unsalted butter melted
  • 2 tbsp sugar

Cheesecake Filling

  • 16 oz cream cheese softened
  • 1/2 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract

Pecan Topping

  • 1/2 cup chopped pecans
  • 2 tbsp brown sugar
  • 1/2 tsp cinnamon

Instructions
 

Preparation

  • Preheat your oven to 325°F. In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a greased mini muffin pan to form the crust.
  • In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar, eggs, and vanilla extract, mixing until fully incorporated. Spoon the filling over the prepared crusts.

Baking

  • Place the muffin pan in the oven and bake for about 25 minutes, or until the centers are set. Allow to cool in the pan for 10 minutes before transferring to a wire rack.
  • Mix chopped pecans, brown sugar, and cinnamon. Sprinkle over the cooled cheesecake bites for a crunchy finish.

Chilling

  • Transfer the cheesecake bites to the refrigerator and chill for at least 2 hours before serving to allow flavors to meld and texture to firm up.
