Equipment

  • 1 Grill medium-high heat
  • 1 Mixing Bowl large
  • 1 skewers metal or soaked wooden

Ingredients

Chicken and Vegetables

  • 2 lbs boneless skinless chicken breasts, cut into 1.5-inch cubes
  • 1 red bell pepper cut into 1-inch pieces
  • 1 yellow bell pepper cut into 1-inch pieces
  • 1 zucchini cut into 1/2-inch rounds
  • 1 red onion cut into wedges

Ranch Marinade

  • 1 cup ranch dressing
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

Preparation

  • In a large mixing bowl, combine ranch dressing, olive oil, minced garlic, lemon juice, salt, and pepper. Mix well to combine.
  • Add the cubed chicken to the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 2 hours, or overnight for best results.
  • Cut the bell peppers, zucchini, and red onion into bite-sized pieces. Set aside until ready to assemble the skewers.

Grilling

  • Thread marinated chicken and vegetables onto skewers, alternating between chicken and vegetables for a balanced skewer.
  • Preheat the grill to medium-high heat. Grill the skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and has grill marks.
  • Ensure the chicken reaches an internal temperature of 165°F for safe consumption.

Serving and Storage

  • Transfer the skewers to a serving platter and serve hot. Pair with your favorite side dishes or salads.
  • Place any leftover skewers in an airtight container and refrigerate for up to 3 days. Reheat before serving.
