Equipment

  • 1 Baking Sheet lined with parchment paper
  • 1 Mixing Bowl large
  • 1 Spoon for stuffing

Ingredients

Main Ingredients

  • 1 lb mini bell peppers
  • 2 cups cooked chicken breast shredded
  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix

Optional Add-ons

  • 1/4 cup chopped green onions
  • 1/4 cup crispy bacon bits
  • 1/4 tsp paprika

Instructions

Preparation

  • Wash and slice the mini peppers in half lengthwise. Remove seeds and membranes to create space for the filling.
  • In a large mixing bowl, combine shredded chicken, softened cream cheese, cheddar cheese, and ranch seasoning. Mix until well combined and creamy.
  • Preheat your oven to 375°F. Line a baking sheet with parchment paper to prevent sticking.
  • Using a spoon or piping bag, fill each pepper half with the creamy chicken mixture. Be generous with the filling to ensure each bite is flavorful.
  • Place the stuffed peppers on the prepared baking sheet. Bake for 20 minutes or until the cheese is bubbly and slightly golden.
  • Remove the peppers from the oven and let them cool for a few minutes before serving. This allows the filling to set slightly.
  • Arrange the stuffed peppers on a serving platter. Garnish with chopped green onions or additional bacon bits if desired.
  • Store any leftovers in an airtight container in the refrigerator for up to three days.
  • To reheat, place in a preheated oven at 350°F for about 10 minutes until heated through. Avoid microwaving to maintain texture.
