Equipment

  • 1 9-inch round cake pan greased and floured
  • 1 Electric Mixer
  • 1 Mixing Bowl large

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves

Wet Ingredients

  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 2 large eggs room temperature
  • 1 cup pumpkin puree
  • 1 tsp vanilla extract
  • 1/2 cup milk

Streusel Topping

  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar packed
  • 1/2 tsp ground cinnamon
  • 2 tbsp unsalted butter melted
  • 1/4 cup chopped pecans or walnuts optional

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan with butter and flour.
  • In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the pumpkin puree and vanilla extract until smooth.
  • In another bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
  • In a small bowl, combine the flour, brown sugar, and cinnamon. Add the melted butter and mix with a fork until crumbly. If using, stir in chopped nuts.
  • Pour the batter into the prepared cake pan, spreading it evenly. Sprinkle the streusel topping generously over the batter.
  • Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Serving

  • Once cooled, cut the cake into bite-sized pieces. Serve with coffee, tea, or your favorite fall beverage.

Storage

  • Store any leftover bites in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to a week or freeze for up to a month.
