Ingredients
  

For the Custard

  • 1 cup pumpkin puree (canned or homemade) Use fresh pumpkin puree for better flavor if desired.
  • 3 large eggs
  • 1 cup milk (or dairy-free alternative)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt

For the French Toast

  • 8 slices thick-cut bread (such as brioche or challah)
  • 2 Tbsp butter (for cooking) Additional butter may be needed for cooking more slices.

Optional Toppings

  • powdered sugar For serving.
  • maple syrup For serving.

Preparation

  • In a mixing bowl, combine the pumpkin puree, eggs, milk, vanilla extract, cinnamon, nutmeg, and salt. Whisk until smooth and well combined.
  • Preheat a large skillet or griddle over medium heat and add 1 tablespoon of butter, melting it to coat the bottom of the pan.

Cooking

  • Take a slice of bread and dip it into the pumpkin custard mixture, allowing it to absorb the liquid for a few seconds on each side.
  • Place the soaked bread slice onto the preheated skillet and cook for about 3-4 minutes or until golden brown.
  • Flip the bread carefully and cook the other side for an additional 3-4 minutes until golden and set, adjusting heat as necessary.
  • Serve the pumpkin French toast immediately, topped with powdered sugar and drizzled with maple syrup if desired.

Notes

This dish can be made in larger batches; keep finished slices warm in an oven set to low until serving. Enhance with toppings like chopped pecans or whipped cream.
