  • 1/4 cup coconut oil melted
  • 1/4 cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract

Preparation

  • In a large mixing bowl, combine rolled oats, whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt. Stir until well mixed.
  • In a separate bowl, whisk together pumpkin puree, melted coconut oil, honey, egg, and vanilla extract until smooth.
  • Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Do not overmix to keep the bites tender.
  • Use a tablespoon to scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten slightly with the back of the spoon.
  • Bake in the preheated oven at 350°F for 12-15 minutes, or until the edges are golden brown.
