Ingredients
  

Chicken and Vegetables

  • 1 lb chicken breasts cubed
  • 1 pint cherry tomatoes

Pesto Sauce

  • 2 cups fresh basil leaves
  • 1/2 cup olive oil
  • 1/3 cup pine nuts
  • 2 cloves garlic
  • 1/2 cup Parmesan cheese grated

Instructions
 

Preparation

  • In a food processor, combine basil, olive oil, pine nuts, garlic, and Parmesan. Blend until smooth. Set aside.
  • Cut chicken breasts into cubes. Place in a bowl and coat with half of the pesto. Marinate for at least 30 minutes.

Assembling and Cooking

  • Thread the chicken and cherry tomatoes onto skewers, alternating each piece.
  • Preheat the grill to medium-high. Place skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through.

Serving

  • Drizzle the remaining pesto over the cooked skewers before serving. Enjoy immediately for the best taste.

  • Place any leftover skewers in an airtight container and refrigerate for up to three days.
