Brownie Base

  • 1/2 cup unsalted butter melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder

Pecan Pie Topping

  • 1/3 cup unsalted butter
  • 1 cup brown sugar
  • 1/3 cup corn syrup
  • 2 large eggs beaten
  • 1/2 tsp vanilla extract
  • 1 cup pecans chopped

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Grease a mini muffin tin and set aside. In a large mixing bowl, combine melted butter and sugar, stirring until well mixed. Add eggs and vanilla extract, mixing until smooth.
  • In another bowl, whisk together cocoa powder, flour, salt, and baking powder. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • In a saucepan over low heat, melt butter. Stir in brown sugar and corn syrup, cooking until sugar is dissolved. Remove from heat and let cool slightly. Whisk in the beaten eggs and vanilla extract. Fold in chopped pecans.
  • Spoon brownie batter into each mini muffin cup, filling about halfway. Top each with a spoonful of the pecan mixture.
  • Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan before transferring to a wire rack.
