Party Style Chicken Quesadillas

Ingredients
  

Chicken Filling

  • 1 1/2 lb boneless skinless chicken breast thinly sliced
  • 1 tbsp olive oil
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika

Quesadillas

  • 3 cups shredded cheese cheddar, Monterey Jack, or blend
  • 6 large flour tortillas
  • 1 tbsp butter or oil for cooking

Instructions
 

  • Season the sliced chicken with salt, black pepper, garlic powder, and paprika.
  • Heat olive oil in a skillet over medium heat. Add the chicken and cook until fully cooked and lightly browned, stirring occasionally.
  • Transfer the cooked chicken to a bowl and set aside.
  • Wipe the skillet if needed and return it to medium heat. Lightly butter or oil one side of a tortilla and place it in the skillet.
  • Sprinkle shredded cheese over half of the tortilla, then add a thin, even layer of cooked chicken over the cheese.
  • Sprinkle a second light layer of cheese over the chicken, fold the tortilla, and press gently with a spatula.
  • Cook until lightly golden on the bottom, flip, and cook the other side until the cheese is melted and the tortilla is lightly golden.
  • Remove from the skillet and repeat with remaining tortillas and filling.
  • Slice each quesadilla into small wedges and arrange on a serving platter. Serve warm.

Notes

For party serving, keep fillings thin so wedges hold together. Reheat leftovers in a skillet or oven for best texture.
