Ingredients
  

Meatloaf

  • 1 1/2 lb ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 large egg
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried parsley
  • 1/3 cup ketchup

Cheese Topping

  • 1 1/2 cups shredded cheddar cheese
  • cooking spray or oil for baking dish

Instructions
 

  • Preheat oven to 375°F and lightly grease a loaf pan or baking dish.
  • Combine breadcrumbs and milk in a small bowl and let soften.
  • Mix ground beef, soaked breadcrumbs, egg, onion, garlic, salt, black pepper, paprika, parsley, and ketchup until just combined.
  • Transfer the meat mixture to the prepared pan and shape evenly.
  • Bake uncovered for 40 minutes, then carefully drain excess grease if needed.
  • Sprinkle shredded cheddar cheese evenly over the meatloaf.
  • Return to oven and bake for 15 to 20 minutes until cheese is melted and lightly golden.
  • Let rest for 10 minutes before slicing and serving.

Notes

Add the cheese during the final bake to prevent it from overbrowning or becoming greasy.
