  • 1.5 lbs chicken breasts cut into bite-sized pieces
  • 1 cup long-grain white rice
  • 8 cups chicken broth
  • 1 cup heavy cream

  • 1 tsp dried thyme
  • 2 tbsp fresh parsley chopped

Preparation

  • Dice the onion, carrots, and celery. Mince the garlic. Cut the chicken breasts into bite-sized pieces and rinse the rice under cold water.

Cooking

  • In a large pot, heat olive oil and butter over medium heat. Add the onions, carrots, and celery, sautéing for about 5 minutes until soft. Add the garlic and cook for another minute.
  • Add the chicken pieces to the pot and cook until they are no longer pink. Stir in the rice to coat it with the flavors from the pot.
  • Pour in the chicken broth and bring to a boil. Reduce heat to a simmer, cover, and cook for 20 minutes, or until the rice is tender.
  • Stir in the heavy cream and season with salt, pepper, and thyme. Let it simmer for an additional 5 minutes.
  • Remove the pot from heat and stir in fresh parsley. Adjust seasonings as needed.

Serving

  • Ladle the soup into bowls and serve hot. Garnish with additional parsley if desired.
