Ingredients
  

Chicken

  • 1 lb boneless skinless chicken thighs
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 2 cloves garlic minced
  • 1 tbsp grated ginger

Rice and Corn

  • 1 cup jasmine rice
  • 1 can 15 oz corn, drained
  • 2 cups chicken broth
  • 2 tbsp vegetable oil

Preparation

  • Cut the chicken thighs into bite-sized pieces. In a bowl, combine soy sauce, honey, minced garlic, and grated ginger. Add the chicken and toss to coat. Marinate for at least 15 minutes.

Cooking

  • Heat vegetable oil in a large skillet over medium heat. Add the marinated chicken pieces and cook until browned and cooked through. Remove chicken from the skillet and set aside.
  • In the same skillet, add jasmine rice and corn. Stir to combine, then pour in the chicken broth. Bring to a simmer, cover with a lid, and cook until rice is nearly done.
  • Return the cooked chicken to the skillet with the rice and corn. Stir to combine and cook for a few more minutes until the rice is fully tender and everything is heated through.
