Ingredients
  

Crust

  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter chilled and cubed
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1/4 cup ice water

Filling

  • 5 cups fresh strawberries hulled and halved
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 tbsp lemon juice

Instructions
 

Preparation

  • Combine flour, sugar, and salt in a mixing bowl. Add cubed butter and use a pastry cutter to blend until the mixture resembles coarse crumbs. Gradually add ice water, mixing until dough forms. Divide and refrigerate for at least 30 minutes.
  • Wash, hull, and halve the strawberries. In a large bowl, combine strawberries with sugar, cornstarch, and lemon juice. Mix gently until well coated.

Assembly

  • On a floured surface, roll out one dough half to fit a 9-inch pie pan. Place dough in pan and trim excess edges.
  • Pour the strawberry filling into the prepared crust, spreading evenly. Roll out the second dough half and place over filling, sealing and crimping the edges.
  • Preheat oven to 375°F. Bake the pie for 50 minutes or until the crust is golden brown and the filling is bubbling. Allow to cool completely before serving.

Serving

  • Slice the pie into 8 pieces and serve with a scoop of vanilla ice cream or a dollop of whipped cream for added indulgence.

Storage

  • Cover the pie with plastic wrap and store in the refrigerator for up to three days. For longer storage, wrap tightly and freeze for up to two months.
