  • 2 cups rolled oats
  • 2 medium apples, peeled and diced
  • 1.5 cups almond milk (or any milk of your choice)
  • 0.5 cup brown sugar (or maple syrup)
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  • 0.5 tsp salt
  • 2 eggs, beaten
  • 0.5 cup chopped walnuts (optional) For added texture and flavor
  • additional apple slices for topping (optional)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the rolled oats, diced apples, almond milk, brown sugar, cinnamon, vanilla extract, salt, and beaten eggs. Stir until all ingredients are evenly incorporated.
  • Pour the mixture into a greased baking dish, spreading it evenly.
  • If using, sprinkle the chopped walnuts over the top and arrange a few apple slices for decoration.

Baking

  • Place the baking dish in the preheated oven and bake for 30-35 minutes until the top is golden brown and the bake feels set in the center.
  • Allow it to cool for a few minutes before slicing.

Serving

  • Serve warm, perhaps with a side of yogurt or a drizzle of honey.

Notes

Use a mix of sweet and tart apples for added flavor complexity. This breakfast bake can be made ahead and stored in the refrigerator for up to three days. Reheat individual servings in the microwave for a quick breakfast option.
