Ingredients
  

Chicken and Base Ingredients

  • 1.5 lbs chicken thighs, cut into pieces
  • 1 large onion chopped
  • 3 cloves garlic, minced
  • 2-3 large tomatoes blended
  • 2-3 tablespoons red bell pepper, blended
  • 1-2 pieces Scotch bonnet peppers, blended (adjust for spice preference)
  • 2 teaspoons ground ginger
  • 1 teaspoon thyme
  • 2 tablespoons vegetable oil
  • 1-2 cups chicken broth (or water)

  • Optional: fresh cilantro, chopped (for garnish)

Cooking Instructions

  • In a large pot, heat the vegetable oil over medium heat. Once the oil is hot, add the chopped onions. Sauté for about 5 minutes until the onions become translucent and fragrant.
  • Add the minced garlic, ginger, and blended pepper mixture (tomatoes and bell peppers) to the pot. Cook for another 10 minutes, stirring occasionally.
  • Stir in the thyme and add salt to taste. Pour in the chicken broth, bringing the mixture to a gentle simmer. Allow it to cook for another 5 minutes.
  • Add the chicken pieces to the pot, cover and cook for 30 minutes on low heat, stirring occasionally.
  • Taste and adjust the seasoning, adding more salt or spices if desired. For a thicker sauce, let it simmer uncovered for an additional 5-10 minutes.
  • Once done, remove from heat and let it sit for a few minutes before serving. Garnish with fresh cilantro if you like.

Notes

For a richer flavor, marinate the chicken in some spices and oil for a few hours before cooking. Adjust the Scotch bonnet peppers according to your spice tolerance. This stew enhances the next day after the flavors meld, perfect for meal prep. Serve with lots of sides like rice or plantains.
