  • 1 lb shrimp peeled and deveined
  • 2 cups corn kernels fresh or frozen
  • 1 cup Cotija cheese crumbled
  • 1/4 cup cilantro chopped
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 lime juiced
  • 1 tsp chili powder
  • Salt and pepper to taste

Preparation

  • Peel and devein the shrimp if not already done. Chop the cilantro and set aside. If using fresh corn, shuck and remove kernels.
  • In a small bowl, combine chili powder, salt, and pepper. Set aside for seasoning later.

Cooking

  • Heat olive oil in a large skillet over medium-high heat. Add garlic and sauté until fragrant. Add shrimp and cook until they turn pink, about 3-4 minutes. Remove from skillet and set aside.
  • In the same skillet, add corn and cook until slightly charred, about 5 minutes. Stir occasionally.
  • Return shrimp to the skillet with the corn. Add the seasoning mix and stir well to combine. Cook for an additional 2-3 minutes.

Serving

  • Remove skillet from heat. Stir in lime juice and top with crumbled Cotija cheese and chopped cilantro. Serve immediately.

Storage

  • Allow leftovers to cool completely before transferring to an airtight container. Store in the refrigerator for up to 3 days. Reheat in a skillet over medium heat before serving.
