  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1/4 cup lemon juice
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 onion chopped
  • 1 cup cherry tomatoes halved
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper

Preparation

  • In a bowl, season the chicken thighs with salt, pepper, and dried oregano. Toss to coat evenly.
  • Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs and sear until golden brown on both sides, about 4 minutes per side. Remove from skillet and set aside.
  • In the same skillet, add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3 minutes.
  • Stir in the jasmine rice, allowing it to coat with the onion and garlic mixture. Pour in the chicken broth and lemon juice, stirring to combine.
  • Return the chicken thighs to the skillet, nestling them into the rice mixture. Add the cherry tomatoes on top.
  • Cover the skillet with a lid and reduce the heat to low. Let it simmer for 20-25 minutes, or until the rice is tender and the chicken is fully cooked.
  • Remove from heat and let the dish rest for 5 minutes before serving. This helps the rice absorb any remaining liquid.
  • Serve with a side of warm pita bread or a fresh green salad for a complete meal.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
