Ingredients
  

Garlic Parmesan Chicken Meatloaf

  • 1 1/2 lb ground chicken
  • 3/4 cup breadcrumbs
  • 1/2 cup milk
  • 1/2 cup finely grated Parmesan cheese
  • 2 large eggs
  • 4 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley chopped, optional

Optional Parmesan Topping

  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil

Instructions
 

  • Preheat the oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper to prevent sticking.
  • In a large bowl, combine breadcrumbs and milk. Stir briefly and let sit for 1 to 2 minutes so the crumbs absorb the liquid.
  • Add ground chicken, Parmesan cheese, eggs, minced garlic, salt, black pepper, Italian seasoning, olive oil, and parsley if using. Mix gently until just combined.
  • Transfer the mixture into the prepared pan or shape into a loaf on the baking sheet. Smooth the top lightly without compacting.
  • If using the optional topping, mix Parmesan and olive oil and spread evenly over the top of the loaf.
  • Bake for about 45 minutes, or until the internal temperature reaches 165°F and the exterior is lightly golden.
  • Remove from the oven and rest for 5 to 10 minutes before slicing to allow juices to redistribute.
  • Slice and serve warm using a sharp knife for clean portions.

Notes

This chicken meatloaf can be assembled ahead and refrigerated up to 24 hours before baking. Leftovers store well for up to 3 days and reheat evenly.
