Equipment

  • 1 Grill
  • 1 Mixing Bowl large
  • 1 Whisk

Ingredients

Chicken

  • 1 lb boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder

Honey Mustard Dressing

  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 2 tbsp apple cider vinegar
  • 1/4 tsp salt
  • 2 tbsp olive oil

Crunchy Slaw

  • 2 cups shredded cabbage
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers

Instructions

Preparation

  • Preheat your grill to medium-high heat. Coat the chicken breasts with olive oil, salt, pepper, and garlic powder. Grill each side for about 6-7 minutes until fully cooked. Let the chicken rest before slicing it into strips.
  • In a small bowl, whisk together honey, Dijon mustard, apple cider vinegar, salt, and olive oil until smooth and well combined.
  • In a large mixing bowl, combine shredded cabbage, carrots, and bell peppers. Drizzle with some of the honey mustard dressing and toss to coat.

Serving

  • Divide the slaw among meal prep containers. Top each with sliced grilled chicken. Drizzle additional dressing over the top or keep it separate for serving.

Storage

  • Seal the meal prep containers and store them in the refrigerator for up to 3 days. Keep the dressing separate if possible to maintain the slaw's crunch.

Notes

Pro Tips: Maximize flavor by marinating the chicken in the honey mustard dressing for a few hours before grilling. Ingredient Substitutions: Use turkey breast instead of chicken for a leaner option. How to Serve: Serve with a side of fresh fruit for a balanced meal. Storage & Freshness: Store the slaw and chicken separately if not consuming immediately. Make-Ahead Tips: Prepare the dressing and slaw in advance and store them in the fridge until ready to use.
