Ingredients
  

Salad Ingredients

  • 2 cups cucumber sliced
  • 2 cups cherry tomatoes halved
  • 1/2 cup red onion thinly sliced
  • 1/2 cup kalamata olives pitted and sliced
  • 1 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh dill chopped

Dressing

  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions
 

Preparation

  • Wash and dry all vegetables. Slice the cucumbers and cherry tomatoes, and thinly slice the red onion. Chop parsley and dill.
  • In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, oregano, salt, and pepper until well combined.
  • Divide cucumber, tomatoes, red onion, olives, and feta cheese evenly among four airtight containers. Top with parsley and dill.

Serving

  • Before serving, drizzle each salad box with dressing and toss to coat all ingredients evenly.

  • Seal the containers tightly and store in the refrigerator for up to five days.
