Ingredients
  

Chicken Marinade

  • 1 1/2 lbs skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic minced
  • 2 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Gyro Box Ingredients

  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • 1/2 red onion thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup tzatziki sauce
  • Lemon wedges for serving

Instructions
 

Preparation

  • In a mixing bowl, combine olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper. Add the chicken breasts and coat well. Cover and refrigerate for at least 30 minutes.
  • Preheat a grill or grill pan over medium-high heat. Grill the chicken for 6-8 minutes per side or until fully cooked. Let it rest before slicing.

Assembly

  • Slice the grilled chicken into strips. Divide the chicken, cherry tomatoes, cucumber, and red onion evenly among four meal prep containers.
  • Top each container with crumbled feta cheese. Include a small container of tzatziki sauce and a lemon wedge in each box.

Serving

  • When ready to eat, let the box come to room temperature or reheat the chicken separately. Enjoy with tzatziki sauce and a squeeze of lemon.

Storage

  • Seal the meal prep containers with lids and store in the refrigerator for up to four days. Keep the tzatziki separate until serving.
