  • 2 pieces boneless skinless chicken breasts, sliced into strips
  • Salt & pepper, to taste
  • 1 Tbsp olive oil (for cooking)
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 8 oz cooked pasta (fettuccine or penne) (≈225 g)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Optional: fresh parsley or basil, minced, for garnish

Preparation

  • Season the chicken strips with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat, then add the chicken. Cook for about 5–7 minutes, stirring occasionally, until the chicken is golden and cooked through. Remove the chicken from the skillet and set it aside.
  • In the same skillet, add the minced garlic and Italian seasoning. Sauté for about 1–2 minutes until fragrant, taking care not to burn the garlic.
  • Pour in the chicken broth and scrape any bits off the bottom of the skillet. Allow it to simmer for about 3–4 minutes.
  • Reduce the heat to medium-low and stir in the heavy cream. Let it simmer gently for another 5 minutes, stirring occasionally.
  • Add the cooked pasta and chicken back into the skillet, tossing everything together until well mixed.
  • Stir in the mozzarella and Parmesan cheese, allowing them to melt into the sauce.
  • Taste and adjust seasoning, adding more salt and pepper if desired.
  • If using, sprinkle freshly minced parsley or basil over the top before serving.

Notes

For extra flavor, marinate the chicken in Italian dressing for a couple of hours before cooking. Consider adding vegetables, like spinach or sun-dried tomatoes, for added nutrition and flavor. If you prefer a lighter version, substitute half-and-half for the heavy cream. This dish can be made ahead of time; the flavors will develop even more overnight in the fridge. Reheat gently on the stovetop, adding a splash of chicken broth or cream to restore creaminess.
