  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning

  • ¼ cup grated Parmesan cheese
  • Fresh basil, for garnish (optional)

Preparation

  • Begin by arranging the chicken breasts in the bottom of your slow cooker. They should fit snugly, allowing for even cooking.
  • In a mixing bowl, combine the heavy cream, chicken broth, minced garlic, Italian seasoning, salt, and pepper. Whisk until smooth and well-blended.
  • Pour the cream mixture over the chicken in the slow cooker. Make sure the chicken is mostly submerged in the liquid to ensure even cooking and flavor infusion.
  • Add the chopped sun-dried tomatoes on top of the chicken.
  • Cover the slow cooker and set it on low heat. Let it cook for about four hours, or until the chicken reaches an internal temperature of 165°F and is tender enough to shred easily.
  • Once cooked, shred the chicken using two forks, and stir in the grated Parmesan cheese until well combined.
  • Taste and adjust seasoning with additional salt and pepper if necessary. Serve the chicken warm, garnished with fresh basil if desired.

Notes

For added flavor, consider browning the chicken breasts in a skillet for a few minutes before placing them in the slow cooker. Make it gluten-free by using a gluten-free chicken broth. Leftovers can be refrigerated and reheated the next day, making it a convenient option for meal planning. This dish can be frozen for up to three months; just make sure to store it in airtight containers.
