  • 1 Large Skillet for cooking lamb chops
  • 1 Baking Sheet for roasting sweet potatoes

Ingredients

Lamb Chops and Marinade

  • 8 lamb chops about 1 inch thick
  • 1/4 cup pure maple syrup
  • 3 tablespoons soy sauce
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Sweet Potatoes and Seasoning

  • 4 medium sweet potatoes peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste

Instructions

Preparation

  • In a mixing bowl, whisk together maple syrup, soy sauce, minced garlic, olive oil, and thyme. Season with salt and pepper. Place lamb chops in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

Cooking

  • Preheat the oven to 400°F. Toss cubed sweet potatoes with olive oil, cinnamon, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes, stirring halfway through.
  • Heat a large skillet over medium-high heat. Remove lamb chops from marinade and place in the skillet. Cook each side for 3-4 minutes or until they reach desired doneness, basting with remaining marinade.
