Equipment

  • 1 Large mixing bowl
  • 1 Whisk
  • 1 pot for boiling pasta
  • 1 Cutting board
  • 1 Knife

Ingredients

Main Ingredients

  • 2 cups cooked rotini pasta
  • 2 cups cooked chicken breast chopped
  • 1 cup diced dill pickles
  • 1/2 cup chopped red onion
  • 1/2 cup chopped celery

Dressing Ingredients

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup dill pickle juice
  • 2 tbsp fresh dill chopped
  • Salt and pepper to taste

Instructions

Preparation

  • Bring a large pot of salted water to a boil. Add rotini pasta and cook until al dente, about 8-10 minutes. Drain and rinse under cold water to stop cooking.
  • While the pasta cooks, prepare the chicken. Cook and chop the chicken breast into bite-sized pieces. Allow the chicken to cool before mixing it into the salad.

Mixing

  • In a large mixing bowl, combine the cooled pasta, chicken, dill pickles, red onion, and celery. Toss gently to mix the ingredients evenly.
  • In a separate bowl, whisk together mayonnaise, sour cream, dill pickle juice, and fresh dill. Adjust seasoning with salt and pepper to taste.
  • Pour the dressing over the pasta mixture. Toss everything until well coated and combined. Taste and adjust seasoning if necessary.

Serving and Storage

  • Serve the pasta salad immediately or chill in the refrigerator for at least an hour to let the flavors meld. Garnish with extra dill if desired.
  • Store any leftovers in an airtight container in the refrigerator. The salad will keep well for up to 3 days, making it perfect for meal prep.
