Instructions
Wash and dry the apples, core them, and dice into evenly sized pieces. Transfer to a large mixing bowl.
In a small bowl, whisk together lemon juice, maple syrup or honey, cinnamon, vanilla extract, and salt if using.
Pour the dressing over the apples and gently toss until evenly coated.
Cover and refrigerate for 15 minutes, then toss gently and serve as a breakfast fruit side.
Notes
Use crisp apples like Honeycrisp or Fuji for best texture. Serve within 24 hours and stir gently before serving if juices collect.
