Ingredients
  

Salmon

  • 4 salmon fillets about 6 oz each
  • 2 tbsp lemon pepper seasoning

Rice

  • 1 cup white rice
  • 2 cups vegetable broth

Optional Add-ons

  • 1 tbsp fresh dill chopped
  • 1 lemon sliced
  • 2 cups mixed vegetables steamed

Preparation

  • Preheat your oven to 400°F. Prepare a baking sheet by lining it with parchment paper or aluminum foil for easy cleanup.
  • Place the salmon fillets on the prepared baking sheet. Sprinkle lemon pepper seasoning evenly over each fillet until well-coated.
  • Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon is opaque and flakes easily with a fork.

Cooking the Rice

  • In a medium saucepan, bring 2 cups of vegetable broth to a boil. Stir in 1 cup of rice, reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.
  • Once cooked, remove the rice from heat and let it sit, covered, for 5 minutes. Fluff with a fork before serving.

  • Divide the cooked rice evenly among four meal prep containers.
  • Top each portion of rice with a baked salmon fillet. Add any optional vegetables or garnishes as desired.
