Ingredients
  

Tilapia and Potatoes

  • 4 tilapia fillets
  • 1 lb baby potatoes halved
  • 2 tbsp olive oil
  • Salt and pepper to taste

Lemon Parmesan Topping

  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • Zest of 1 lemon
  • 1/2 tsp garlic powder
  • 1 tbsp chopped fresh parsley

Instructions
 

Preparation

  • Preheat your oven to 400°F and line a sheet pan with parchment paper.
  • In a mixing bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Spread them out on one side of the prepared sheet pan.
  • Pat the tilapia fillets dry with paper towels and place them on the other side of the sheet pan.

Assembling

  • In a small bowl, combine the grated Parmesan, breadcrumbs, lemon zest, garlic powder, and parsley.
  • Press the Parmesan mixture onto each tilapia fillet, ensuring an even coating.

Baking

  • Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and the potatoes are golden and crispy. Turn the potatoes halfway through for even cooking.
