  • 1 pound boneless chicken thighs
  • 1 cup couscous
  • 2 tablespoons olive oil
  • 1/2 cup grated parmesan cheese
  • 1 lemon juiced and zested
  • 2 cups chicken broth
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley chopped

Instructions
 

Preparation

  • Season the chicken thighs with salt, pepper, and garlic powder. Heat olive oil in a large skillet over medium-high heat. Sear the chicken on both sides until golden brown, then remove from the skillet and set aside.
  • In the same skillet, add minced garlic and sauté until fragrant. Stir in the couscous and toast lightly. Add chicken broth, lemon juice, and zest. Bring to a simmer, reduce heat to low, and cover.
  • Once the couscous is cooked, return the chicken to the skillet. Add grated parmesan and stir gently to combine. Cover and cook for a few more minutes until the chicken is fully cooked.
