Chicken Bowls

  • 1/4 cup kalamata olives pitted and sliced
  • 1/4 cup feta cheese crumbled
  • 2 tbsp fresh parsley chopped

Preparation

  • In a medium mixing bowl, combine lemon juice, olive oil, oregano, garlic, salt, and pepper. Add the chicken breasts, ensuring they are evenly coated. Marinate for at least 30 minutes, or overnight for maximum flavor.
  • Preheat a grill pan over medium-high heat. Grill the marinated chicken breasts for 5-7 minutes on each side until fully cooked and golden brown. Let rest for 5 minutes before slicing.
  • While the chicken is cooking, cook the brown rice according to package instructions. Fluff with a fork once done and keep warm.
  • In a saucepan, sauté cherry tomatoes, cucumber, and red onion over medium heat until slightly tender. Remove from heat and set aside.
  • In each serving bowl, layer a base of brown rice followed by slices of chicken. Top with sautéed vegetables, olives, and a sprinkle of feta cheese. Garnish with fresh parsley.
