Ingredients
  

Lemon Rice

  • 1 cup jasmine rice
  • 1 1/2 cups water
  • Juice and zest of 1 lemon
  • Pinch of salt

Herb-Infused Tuna

  • 1 can 5 oz tuna, drained
  • 2 tablespoons olive oil
  • 1/4 cup chopped parsley
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Preparation

  • Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rice with water and a pinch of salt. Bring to a boil over medium-high heat, then reduce the heat to low. Cover and simmer for 15 minutes until the rice is tender and the water is absorbed. Fluff with a fork and stir in the lemon juice and zest. Set aside.

Prepare the tuna

  • In a mixing bowl, combine the drained tuna with olive oil, chopped parsley, and cilantro. Season with salt and pepper to taste. Let the tuna marinate for at least 10 minutes to allow the flavors to meld.
