  • 2 cans of tuna drained
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh dill chopped
  • 1/2 cup cucumber diced
  • 1/2 cup bell pepper diced
  • 1/2 cup carrots julienned

Dressing

  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt to taste
  • Pepper to taste

Preparation

  • Drain the tuna thoroughly and place it in a large mixing bowl. Add the chopped parsley and dill, and mix until well combined.
  • Wash and dry all vegetables. Dice the cucumber and bell pepper, and julienne the carrots. Ensure all pieces are of similar size for even distribution.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Taste and adjust seasoning as needed.
  • Divide the tuna mixture evenly among four lunch boxes. Surround with equal portions of the diced vegetables. Drizzle the dressing over the top.
  • Seal the lunch boxes tightly. Store in the refrigerator for up to three days. For best results, add the dressing just before serving.
  • Enjoy the lunch boxes chilled, directly from the fridge. They can be accompanied by a side salad or fresh fruit for a complete meal.
