Preparation

  • In a large mixing bowl, whisk together lemon juice, garlic, olive oil, salt, and pepper. Add the chicken breasts and toss to coat. Let marinate for at least 30 minutes.
  • While chicken is marinating, slice the zucchini, bell pepper, and red onion. Set aside for assembly.

Assembly

  • Lay out four large pieces of aluminum foil. Place a marinated chicken breast in the center of each. Surround with sliced vegetables and top with a lemon round.
  • Fold the foil around the chicken and vegetables to create a secure packet. Ensure all edges are tightly sealed to trap steam.

Cooking

  • Place packets on a preheated grill over medium-high heat, or on a baking sheet in a 400°F oven. Cook for 25-30 minutes, until chicken is fully cooked.
  • Carefully open one packet and check that the chicken has reached an internal temperature of 165°F.
