  • 4 cod fillets approximately 6 oz each
  • 1 cup orzo pasta
  • 2 tbsp unsalted butter
  • 2 cloves garlic minced
  • 1 1/2 cups chicken broth

Flavor Enhancers

  • 1 lemon zest and juice
  • Salt and pepper to taste
  • 1 tbsp olive oil

  • 1 cup spinach roughly chopped
  • 1/2 cup cherry tomatoes halved

Preparation

  • Pat dry the cod fillets. Season with salt and pepper. Heat a skillet with olive oil over medium heat. Add cod to the skillet and cook for 3-4 minutes on each side, until golden and cooked through. Remove and set aside.
  • In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant. Add orzo, stirring to coat in the garlic butter. Pour in chicken broth and bring to a simmer.
  • Continue to simmer the orzo, stirring occasionally, for about 10 minutes or until the orzo is tender and has absorbed most of the broth.
  • Return the cooked cod to the skillet. Squeeze lemon juice over the top and sprinkle with lemon zest. Stir gently to combine.
  • If using, add spinach and cherry tomatoes to the skillet. Stir through until the spinach is wilted and the tomatoes are slightly softened.

Serving

  • Transfer the Lemon Garlic Butter Cod Orzo to plates. Garnish with additional lemon zest if desired. Serve immediately for the best flavor.

Storage

  • Allow leftovers to cool completely before transferring to an airtight container. Store in the refrigerator for up to 3 days or freeze for up to 1 month.
