Ingredients
  

For the dressing

  • 1/4 cup freshly squeezed lemon juice (about 2 lemons) Best if freshly squeezed
  • 1/2 cup extra virgin olive oil
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • 1 tsp honey (optional, for sweetness) Adjust based on sweetness preference
  • Salt and pepper, to taste
  • 1/2 tsp dried oregano or thyme (optional) Feel free to use fresh herbs

Preparation

  • Juice the lemons to obtain 1/4 cup of fresh lemon juice. Strain the juice to remove seeds and excess pulp.
  • In a mixing bowl or jar, combine the lemon juice, minced garlic, Dijon mustard, and optional honey. Whisk or shake until well blended.
  • Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing.
  • Season with salt, pepper, and dried herbs, if using. Taste and adjust seasoning as needed.
  • Transfer to a jar or airtight container. Let sit for at least 10 minutes to allow flavors to meld before serving.

Notes

For best flavor, use freshly squeezed lemon juice. Adjust garlic according to taste preference. Customize with fresh herbs and store leftovers in the refrigerator for up to a week.
