Ingredients
  

For the Bake

  • 4 cups cooked long-grain white rice
  • 4 salmon fillets skinless
  • 1/4 cup fresh lemon juice
  • 1/4 cup butter melted
  • 1 cup heavy cream
  • 1 tbsp lemon zest
  • Salt and pepper to taste
  • 2 tbsp fresh dill chopped
  • 2 tbsp fresh parsley chopped

Instructions

  • Cook the rice according to package instructions. Set aside.
  • Rinse the salmon fillets and pat them dry with paper towels.
  • In a saucepan over low heat, melt the butter. Stir in lemon juice, lemon zest, and heavy cream. Season with salt and pepper. Simmer gently for 2-3 minutes.
  • Preheat the oven to 375°F (190°C). In a 9x13 inch baking dish, spread the cooked rice evenly. Place salmon fillets on top of the rice. Pour the lemon butter sauce over the entire dish. Sprinkle chopped dill and parsley over the top.
  • Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 30 minutes, then remove the foil and bake for an additional 10-15 minutes, or until the salmon is cooked through.
