Lemon Butter Cod with Rice

Ingredients
  

For the cod

  • 4 fillets cod fillets (about 6 oz each)
  • 3 Tbsp unsalted butter
  • 2 Tbsp fresh lemon juice
  • 1 zest zest of 1 lemon
  • 2 cloves garlic, minced
  • Salt & pepper, to taste

For serving

  • 2 cups cooked rice (white or brown)
  • 2 Tbsp fresh parsley, chopped (for garnish)
  • Optional: lemon wedges for serving

Preparation

  • Start by cooking your rice according to package instructions. This will provide a warm, fluffy base for your cod. Once done, set aside and keep warm.

Cooking the Cod

  • In a large skillet, melt the butter over medium heat.
  • Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to let it brown.
  • Season the cod fillets with salt and pepper. Carefully place them in the skillet and cook for about 3-4 minutes on each side, or until the fish flakes easily with a fork.
  • Squeeze the fresh lemon juice over the cod and sprinkle with lemon zest while it cooks.
  • Once cooked, remove the cod from the skillet and serve it over the warm rice. Drizzle any remaining butter and garlic sauce from the pan over the top, and finish with chopped parsley.

Notes

Choose fresh cod fillets for the best flavor. For added heat, consider adding a pinch of red pepper flakes when sautéing the garlic. Balance richness with steamed vegetables or salad.
