Ingredients
  

For the soup base

  • 1 lb ground beef or Italian sausage May use a combination of meats.
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • to taste Salt & pepper
  • 24 oz marinara sauce
  • 4 cups chicken or vegetable broth
  • 8 oz uncooked lasagna noodles, broken into pieces

For the cheese topping

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • to taste fresh basil or parsley, minced (for garnish) Optional

Instructions
 

Cooking the Soup

  • In a large pot over medium heat, brown the ground beef or Italian sausage, breaking it apart with a spoon until fully cooked, about 5-6 minutes. Drain excess fat if necessary.
  • Stir in the diced onion and garlic. Cook for another 2-3 minutes until the onion is soft and fragrant.
  • Add the marinara sauce and broth to the meat mixture. Stir well and bring to a gentle simmer. Season with Italian seasoning, salt, and pepper to taste.
  • Once simmering, add the broken lasagna noodles to the pot. Cover and cook for about 10-12 minutes, stirring occasionally until the noodles are tender but not mushy.
  • In a small bowl, mix the ricotta cheese with salt and pepper until creamy. After the noodles are cooked, drop spoonfuls of the ricotta mixture into the soup, stirring gently to incorporate.
  • Sprinkle mozzarella and Parmesan cheese over the top of the soup. Cover the pot and let it cook for an additional 2-3 minutes, until the cheese is melted and bubbly.
  • Remove from heat and let the soup cool slightly. Serve hot, garnished with fresh herbs if desired.

Notes

For added flavor, brown the meat with a splash of wine before adding the other ingredients. Consider using a mix of ground meats, such as pork and beef, for more complex flavors. This soup can be stored in the refrigerator for up to three days, perfect for quick lunches or dinners. Adjust the consistency by adding more broth or water if it thickens too much upon cooling.
