Equipment

  • 1 Large pot for boiling pasta
  • 1 Colander
  • 1 Large mixing bowl
  • 1 Whisk

Ingredients

Salad Ingredients

  • 8 oz rotini pasta
  • 4 cups kale chopped
  • 1 cup cherry tomatoes halved
  • 1/2 cup Parmesan cheese grated

Caesar Dressing

  • 1/2 cup mayonnaise
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 2 cloves garlic minced
  • Salt and pepper to taste

Instructions

Preparation

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water.
  • Wash the kale thoroughly and pat dry. Remove the tough stems and chop the leaves into bite-sized pieces. Place in a large mixing bowl.
  • Add the cooled pasta, cherry tomatoes, and Parmesan cheese to the bowl with the kale. Toss to combine.

Make the Dressing

  • In a separate bowl, whisk together mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, and garlic. Season with salt and pepper to taste.
  • Pour the Caesar dressing over the salad ingredients. Toss until everything is evenly coated.

Serving

  • Transfer the salad to a serving dish and enjoy immediately, or allow it to chill in the refrigerator for 30 minutes before serving for enhanced flavor.

Storage

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Stir before serving again as the dressing may settle.
