Ingredients
  

Chicken and Potatoes

  • 1.5 lbs chicken thighs skin-on
  • 1 lb baby potatoes halved
  • 2 tbsp olive oil

Garlic Butter Sauce

  • 4 cloves garlic minced
  • 1/4 cup unsalted butter
  • 1 tsp dried rosemary
  • 1 tsp dried thyme

Instructions
 

Preparation

  • Season the chicken thighs with salt, pepper, rosemary, and thyme. Heat olive oil in a cast iron skillet over medium-high heat. Sear the chicken thighs skin-side down until golden brown, about 5 minutes per side. Remove and set aside.
  • In the same skillet, add the halved potatoes cut-side down. Cook until golden and crispy, about 10 minutes. Stir in garlic and butter, melting it and coating the potatoes evenly.
  • Return the chicken to the skillet, nestling it among the potatoes. Spoon some of the garlic butter sauce over the chicken. Transfer the skillet to a preheated oven at 400°F and bake for 25-30 minutes until the chicken is cooked through.

Serving

  • Remove the skillet from the oven. Let it rest for 5 minutes before serving. Garnish with fresh parsley if desired.

  • Allow leftovers to cool before transferring to an airtight container. Store in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
