Equipment

  • 1 Large Skillet for cooking quesadillas
  • 1 grill pan for grilling chicken
  • 1 Mixing Bowl for marinating chicken

Ingredients

Main Ingredients

  • 2 large boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 2 bell peppers sliced
  • 1 large onion sliced
  • 2 cups shredded cheddar cheese
  • 8 large flour tortillas

Instructions

Marinating the Chicken

  • In a mixing bowl, combine olive oil, chili powder, paprika, cumin, garlic powder, and onion powder. Add salt and pepper to taste.
  • Add chicken breasts to the bowl and coat them with the marinade. Let them sit for at least 15 minutes to absorb the flavors.

Grilling the Chicken

  • Preheat a grill pan over medium heat. Cook the chicken breasts for about 6-7 minutes on each side until fully cooked.
  • Remove the chicken from the grill and let it rest for a few minutes before slicing it into thin strips.

Cooking the Vegetables

  • In the same pan, sauté sliced bell peppers and onions over medium-high heat until tender and slightly charred.

Assembling Quesadillas

  • Place shredded cheese on half of each tortilla, then add slices of grilled chicken and sautéed vegetables. Fold the tortilla in half.
  • Heat a large skillet over medium heat. Cook each quesadilla for 3-4 minutes per side until the tortillas are golden and the cheese is melted.

Serving

  • Cut each quesadilla into wedges and serve with dips like sour cream, guacamole, or salsa.

Storage

  • Wrap cooled quesadillas individually in plastic wrap and store in an airtight container in the refrigerator for up to 3 days.
