  • 2 lbs fresh cod fillets
  • 1.5 lbs red potatoes quartered
  • 4 tbsp unsalted butter melted
  • 3 cloves garlic minced
  • 1 lemon juiced and zested
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 tbsp fresh parsley chopped

Optional Additions

  • 1 cup cherry tomatoes halved
  • 2 tbsp capers drained
  • 1 small onion thinly sliced
  • Red pepper flakes to taste

Instructions
 

Preparation

  • Preheat the oven to 400°F. Pat the cod fillets dry with paper towels and season with salt and pepper.
  • In a small bowl, combine melted butter, minced garlic, lemon juice, and zest. Brush this mixture over the cod.
  • Allow the cod to marinate for 15 minutes to enhance flavor.
  • Spread quartered potatoes on a parchment-lined sheet pan. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
  • Roast potatoes in the preheated oven for 15 minutes.
  • Remove the pan from the oven and place the cod fillets among the potatoes. Add cherry tomatoes or capers if using.
  • Return the pan to the oven and bake for another 20-25 minutes, until cod is cooked through and potatoes are tender.

Serving

  • Sprinkle with fresh parsley and serve hot, garnished with additional lemon slices if desired.
