  • 1/2 head radicchio chopped
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1 bell pepper diced
  • 1/2 red onion diced
  • 4 oz salami diced
  • 4 oz turkey breast diced
  • 1 cup shredded mozzarella cheese

Dressing Ingredients

  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 clove garlic minced
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Preparation

  • Wash and dry all vegetables thoroughly. Chop the romaine lettuce and radicchio into bite-sized pieces. Dice the cucumber, bell pepper, and red onion. Halve the cherry tomatoes.
  • Place all chopped vegetables in a large mixing bowl. Add the diced salami, turkey, and shredded mozzarella cheese.

Making the Dressing

  • In a separate bowl, whisk together olive oil, red wine vinegar, minced garlic, and Dijon mustard. Season with salt and pepper to taste.
