  • Preheat the oven to 425°F (220°C).
  • Peel and cube the sweet potatoes into uniform pieces.
  • In a large mixing bowl, toss the cubed sweet potatoes with olive oil, salt, and pepper.

Cooking

  • Spread the seasoned sweet potatoes in a single layer on a baking sheet.
  • Bake for about 25-30 minutes, tossing halfway through for even browning.
  • While the sweet potatoes are roasting, whisk together the hot honey, apple cider vinegar, and smoked paprika in a small bowl.
  • Once the sweet potatoes are tender and caramelized, remove them from the oven.
  • Drizzle the hot honey sauce over the warm potatoes and toss gently to coat.
