Equipment

  • 1 Baking Sheet lined with parchment paper
  • 1 grill or stovetop grill pan
  • 1 Mixing Bowl small

Ingredients

Salmon & Glaze

  • 4 salmon fillets skin-on
  • 1/4 cup honey
  • 2 tbsp sriracha or hot sauce
  • Salt and pepper to taste

Charred Corn

  • 2 ears fresh corn husks removed
  • Olive oil for brushing

Rice Bowl Assembly

  • 2 cups cooked white rice
  • 1/4 cup fresh cilantro or parsley chopped
  • Lime wedges for serving

Instructions

Preparation

  • Pat salmon fillets dry with a paper towel. Season with salt and pepper. In a small bowl, mix honey and sriracha to form a glaze. Brush glaze over the flesh side of salmon.
  • Preheat your oven to 375°F. Place salmon fillets skin-side down on a baking sheet lined with parchment paper.
  • Bake for 12-15 minutes or until salmon is cooked through and glaze is caramelized. Remove from oven and let rest.
  • Preheat grill or stovetop grill pan. Brush corn with olive oil and grill, turning occasionally, until charred, about 8-10 minutes. Let cool, then slice kernels off.
  • Prepare rice according to package instructions. Fluff with a fork and keep warm.

Assembly

  • Divide rice among bowls. Top with salmon fillets and a generous portion of charred corn. Garnish with chopped herbs.
  • Serve with lime wedges on the side. A squeeze of lime over the top enhances the flavors.
  • Store leftovers in separate airtight containers in the refrigerator for up to 3 days.
