Homemade Maple-Sausage Pancake Bites

Ingredients
  

Pancake Mixture

  • 1 cup all-purpose flour
  • 2 Tbsp sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup buttermilk
  • 1 large egg
  • 2 Tbsp unsalted butter, melted

Filling

  • 6 links breakfast sausage, cooked and crumbled
  • ¼ cup maple syrup
  • to taste extra maple syrup for serving

Instructions
 

Preparation

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  • In a separate bowl, combine the buttermilk, egg, and melted butter. Whisk gently until blended.
  • Gradually pour the wet ingredients into the dry ingredients, stirring until just combined.

Cooking

  • Heat a non-stick skillet or griddle over medium heat, greasing lightly with butter.
  • Pour about a tablespoon of batter for each bite onto the skillet and cook for about 2-3 minutes until bubbles form and edges set.
  • Flip the pancakes and cook for another 2 minutes until golden brown.
  • Transfer the cooked pancakes to a cooling rack. Top each pancake with crumbled sausage and a drizzle of maple syrup.
  • Place another pancake on top to create a sandwich and repeat with the remaining batter and sausage.

Notes

For added flavor, try using flavored breakfast sausages. Keep pancakes warm in a low oven while cooking the rest. Freezing leftovers is recommended for easy reheating later.
