  • 3 cups rolled oats
  • 1 cup nuts (e.g., almonds, walnuts, or pecans), roughly chopped
  • ½ cup honey or maple syrup
  • ½ cup vegetable oil or melted coconut oil
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • 1 cup dried fruit (e.g., cranberries, raisins, or chopped apricots), optional Add after baking for chewy texture
  • ½ cup seeds (e.g., pumpkin or sunflower seeds), optional

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the rolled oats, chopped nuts, salt, cinnamon, and any optional seeds. Mix well.
  • In a separate bowl, whisk together the honey (or maple syrup), vegetable oil, and vanilla extract. Pour this mixture over the oat mixture and stir until well-coated.
  • Spread the mixture evenly onto the prepared baking sheet, pressing it down slightly.

Baking

  • Bake for 20–25 minutes, stirring halfway through, until golden brown.
  • Once out of the oven, allow the granola to cool completely on the baking sheet.
  • If adding dried fruit, stir it in once the granola has cooled.

Notes

For a nuttier flavor, toast your nuts before adding. Customize with spices like nutmeg or ginger. Store in an airtight container to keep crunch for up to a month.
