  • 2 pounds beef chuck roast, cut into bite-sized pieces
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil (for browning)
  • 6 cloves garlic, minced
  • ½ cup unsalted butter, melted
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ cup beef broth
  • Optional: fresh parsley, chopped (for garnish)

Preparation

  • Start by cutting the beef chuck roast into bite-sized pieces. Pat them dry with a paper towel and season generously with salt, black pepper, and garlic powder.
  • In a skillet over medium-high heat, add olive oil. Once hot, add the beef pieces in batches, browning them on all sides for about 3-4 minutes. Remove the browned beef and place it in the slow cooker.
  • In the same skillet, add minced garlic and sauté for about 1 minute until fragrant, being careful not to let it burn.
  • Pour the melted butter into the slow cooker over the beef. Add the sautéed garlic, Worcestershire sauce, dried thyme, dried rosemary, and beef broth. Stir gently to combine.
  • Cover the slow cooker and set it on low for 6 hours. After this time, the beef should be fork-tender.
  • Once cooked, taste and adjust the seasoning if necessary. Serve hot, garnished with fresh parsley if desired.

Notes

For additional flavor, consider adding a splash of balsamic vinegar to the sauce towards the end of cooking. For a thicker sauce, remove the beef towards the end and whisk in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons of water) to the sauce.
