Ingredients
  

For the Beef Tenderloin

  • 1 whole beef tenderloin, trimmed 2-3 lb

For the Herb Butter

  • 4 Tbsp unsalted butter, softened
  • 3 cloves garlic, minced
  • 2 tsp fresh rosemary, chopped
  • 2 tsp fresh thyme, chopped
  • Salt & pepper, to taste
  • Olive oil (for searing)

Preparation

  • Preheat your oven to 400°F (200°C). Pat the beef tenderloin dry with paper towels, allowing for a perfect sear.
  • In a small bowl, combine softened butter with minced garlic, rosemary, thyme, salt, and pepper. Mix until well blended.

Cooking

  • Heat a skillet over medium-high heat and add a drizzle of olive oil. Once hot, sear the beef on all sides for about 2-3 minutes per side, until it's evenly browned.
  • Transfer the seared tenderloin to a baking sheet. Spread the herb butter evenly over the top and sides of the meat.
  • Place it in the preheated oven and roast for about 25-30 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.
  • Once cooked, remove the roast from the oven and cover it loosely with foil. Allow it to rest for 10-15 minutes.
  • Slice the beef against the grain into thick pieces and serve immediately.

Notes

Use a meat thermometer to ensure accurate doneness; letting the beef rest is essential for optimal juiciness. Customize the herb butter by adding favorite herbs, and consider spooning some of the melted herb butter over the sliced meat before serving.
