Preparation

  • Dice the onion, mince the garlic, and cut the chicken into bite-sized pieces. Drain and rinse the chickpeas.
  • Heat olive oil in a large pot over medium heat.
  • Add the chicken to the pot and cook until browned on all sides. Remove and set aside.
  • In the same pot, add the onion and cook until translucent. Add garlic, cumin, smoked paprika, and cinnamon, and cook until fragrant.
  • Return the chicken to the pot, add the chicken broth, pumpkin puree, and chickpeas. Stir to combine.
  • Bring the mixture to a simmer and cook for 30 minutes, stirring occasionally.

Serving

  • Season the stew with salt and pepper to taste. Garnish with fresh parsley and serve hot.
